Mommy Lunch

I started making this lunch for S&Z on my days off sometime last spring.
It has come to be known around our house as The Mommy Lunch

The vegetables vary based on what we've picked up at the Farmer's Market or have on hand from the grocery. The protein often includes a few pieces of cheese, a few cubes of tofu (which S&Z have eaten since they were babies and still devour to this day), and some rolled up turkey on a toothpick. The vegetables often include cucumbers, carrots, broccoli and cauliflower; in the summer we always have haruki turnips and radishes as well. It used to be a battle to get Zoe to eat all of these vegetables, but now she pretty readily eats everything since they continue to show up on her plate no matter what. I add a few crackers as a treat (because who doesn't love carbs around here). Silas recently started requesting pickles, so his plate now includes sliced pickles.

I think part of the attraction of this lunch is the variety and the fun factor. They can eat everything with their hands and they also play a little bit. They make cucumber and carrot towers, or bake "cookies" out of cucumber and top them with tofu.

Mommy Lunch is served Friday through Sunday. Today Silas randomly asked for pizza, so Derek offered to make him a cheese pizza with turkey pepperoni on a toasted sandwich thin. I asked Zoe if she wanted pizza or a Mommy Lunch. She voted M.L.

And she devoured everything :)

Silas' Blog

Well it's been a busy 3 years since I last posted! Stay tuned as we may have more posts coming now that it looks like I have a new contributor... Silas recently read a book called "Starting Your Own Blog", and now he is bound and determined for us to let him start his own blog! We convinced him that he should start out by drafting content and a posting calendar. We made templates this morning and he wrote his first "post" today!

Food Prep

We recently bought a house and moved about 20 miles outside of Boston. One of the changes that came along with a new commute and work schedule is that I have started making dinner for the kids every night, instead of just Friday-Sunday (Julia, our wonderful long-time nanny, historically fed them dinner Monday-Thursday). Derek and I still have opposite work schedules, which means that I have the kids without him 5-6 nights/week. In order to make healthy meals AND pack lunches while flying solo, at a minimum I need to have a well-stocked fridge and basic menu plan for the week. Even better is when I can get some cooking and/or food prep done on Sunday. Before I go to the gym on Sunday mornings I usually peruse some recipes in search of culinary inspiration. Today I came across a recipe that caught my eye on Budget Bytes . I was planning on hitting Trader Joe's after the gym, so I picked up the frozen roasted corn that is the cornerstone of this recipe. The first part of my foo...

Auntie Tracy's Visit

Tracy is one of my best friends, but I haven't seen her in person in two years ! This means that I hadn't met her daughter, Brynn, who turns 2 in June. I was sooooooooo excited when I found out that Tracy and Brynn would be visiting Tracy's sister, Timery this weekend. We decided to meet at Mall Tots  again so that the kids could run around and we could catch up. It's a 45 minute drive and it was a beautiful day, so the kids were hunkered down with sunglasses, snack and stuffed animals on the ride up. Zoe and Brynn initially got acquainted in the bouncy house, And then Zoe pushed her around in a car.   Of course my kids (and husband!) had plenty of distraction with the video games too. We packed up the kids and then had lunch at Buffalo Wild Wings before heading back home. Timery and Tracy are like sisters to me. What a fantastic day!!!
