Sausage and Broccoli Rabe Fettucine

Adapted from The Best Simple Recipes from America's Test Kitchen
Serves 4

2 T. extra-virgin olive oil
20 oz. hot or sweet turkey sausage, casings removed
1 small onion, sliced thin
5 garlic cloves, sliced thin
1/2 t. red pepper flakes (optional if using hot sausage)
Salt and pepper
1 lb. fettucine (I used 8 oz. lemon pepper fettucine from Trader Joe's and 8 oz. whole wheat rotini)
1 large bunch broccoli rabe, ~ 1 lb., trimmed and cut into 1-inch pieces
1/2 c. grated Parmesan cheese

1. Bring a large pot of water to a boil. Meanwhile, heat 1 T. oil in a large skillet over medium-high heat. Cook sausage until browned, breaking it into small pieces with a wooden spoon, about 5 minutes. Add onion and continue to cook, about 3 minutes; add garlic and pepper flakes and cook until fragrant, about 2 minutes. Remove from heat, cover, and keep warm.

2. Add 1 T. salt and pasta to boiling water and cook until nearly al dente. Add broccoli rabe and cook until tender, 2-3 minutes. Reserve 1/2 c. cooking water, drain pasta and broccoli rabe, and return to pot. Add Parmesan cheese, sausage & onion mixture, and 1 T. oil and toss to combine, adding reserved pasta water as needed. Season with salt and pepper. Serve.

The Best of Project 366

2012 is coming to a close and I have officially completed Project 366 ! I managed to take and post and keep track of 365 photos out of 366 total days this year. I only missed one day and it was for a pretty good cause . Believe me, these pictures don't take themselves. I shot just under 7000 pictures this year. Once I got an iPhone in March all of the pictures were taken with my phone (~ 5500 pictures!). The camera on the iPhone is really good, I always have it with me, and I like playing around with the filters and other editing tools available in photography apps like Instagram, Camera+, Diptic, and Gridditor. Since I have put so much time, love and energy into Project 366 I thought I should select a few "Best Of's". I had a great time putting this together, and I hope you enjoy these highlights as well! Sickness Update

We saw the pediatrician again this morning - it was our 4th visit in as many weeks. Both kids have an antibiotic-resistant sinus infection. Zoe also still has an ear infection after 5 days of meds; thankfully Silas' double ear infection is finally gone after the 10-day round of amoxicillin. While in the waiting room, we noticed that a rash had appeared on Silas' arms and trunk. Since this coincided with being on meds, Dr. Rundquist had to assume it might have been related to the amoxicillin. Silas was going to get a non-amox antibiotic for the continued sinus infection, and because it's easier to have them on the same meds they were both prescribed Suprax. Silas' O2 saturation was also down a little and he was wheezing during the exam. Apparently he also has broncholitis and he'll be treated with albuterol. He was given a nebulizer treatment in the doctor's office that he tolerated amazingly well at the end of a very long doctor's visit (we were there for 2 ...
