It Doesn't Get Much Easier Than These...

Chicken Pizzaiola
The America's Test Kitchen Family Cookbook
Serves 4

1 large jar of your favorite marinara sauce (or homemade sauce, if you're so inclined)
4 boneless, skinless chicken breasts
Salt and pepper
1 c. Parmesan cheese, grated
1 c. mozzarella, shredded
2 oz. pepperoni (I use turkey pepperoni)

1. Preheat the oven to 450 degrees. Spread the marinara sauce in a 9x13" baking dish.
2. Pat the chicken dry with paper towels and season with salt and pepper. Spread the Parmesan in a shallow dish, then coat the chicken with the Parmesan. Lay the chicken on top of the tomato sauce. Bake for 15 minutes.
3. Sprinkle the mozzarella and pepperoni over the chicken. Increase the oven temperature to 475 degrees and continue to bake until the cheese melts and the chicken registers 160 degrees on an instant-read thermometer, about 5 minutes longer.

This dish is great served with or over pasta.

Tater Tot Casserole
A midwest classic

20 oz. ground turkey or 1 lb. ground hamburger
Salt and pepper and other seasonings of choice (like marjoram, oregano, etc)
1/2 chopped onion, or 1/3 bag of frozen chopped onion
Frozen vegetables of choice (I use Trader Joe's 'Soycatash' + frozen peas)
1 can cream soup of choice (I use cream of celery or cream of mushroom)
A few handfuls of shredded cheese
Frozen tater tots

1. Preheat oven to 375 degrees. Brown the meat over medium-high heat along with the chopped onion. Season with salt and pepper and any other seasonings you like. When turkey is no longer pink, add frozen vegetables. Cook over medium heat until frost is off the vegetables.
2. Off the heat, add cream soup and shredded cheese. Mix to combine.
3. In a 9x13" pan, spread the casserole into an even layer. Cover the casserole with a single layer of tater tots. Bake on 375 for 20 minutes. Check on doneness of the tots. Continue baking until the tater tots are golden brown and crispy.

    Maybe I can make them myself... that would definitely be an all day endeavor.

  2. Any hash browns around???? I could imagine a hash brown topping. Or do mashed potatoes and turn it into a shepherd's pie!

Silas' Blog

Well it's been a busy 3 years since I last posted! Stay tuned as we may have more posts coming now that it looks like I have a new contributor... Parks

We decided to get Zoe's haircut on Saturday morning at a place geared towards kids called Snip-Its . Neither Derek nor I anticipated what a meltdown Zoe was going to have. The haircut is half-assed at best and Derek will have to fix it when she's more calm. We were so traumatized that we headed to the park to get the day going on a better foot! We went back to Larz Anderson, the park where the  Psychiatry picnic was held on Thursday . It is really close to our house and is lovely and shaded. I think it's one of my new favorite spots! The kids like it too :) S&Z love playing with wood chips, so there was a lot of that! Snacks were enjoyed on the bench and I tried to get a few pictures of the haircut... Sickness Update

We saw the pediatrician again this morning - it was our 4th visit in as many weeks. Both kids have an antibiotic-resistant sinus infection. Zoe also still has an ear infection after 5 days of meds; thankfully Silas' double ear infection is finally gone after the 10-day round of amoxicillin. While in the waiting room, we noticed that a rash had appeared on Silas' arms and trunk. Since this coincided with being on meds, Dr. Rundquist had to assume it might have been related to the amoxicillin. Silas was going to get a non-amox antibiotic for the continued sinus infection, and because it's easier to have them on the same meds they were both prescribed Suprax. Silas' O2 saturation was also down a little and he was wheezing during the exam. Apparently he also has broncholitis and he'll be treated with albuterol. He was given a nebulizer treatment in the doctor's office that he tolerated amazingly well at the end of a very long doctor's visit (we were there for 2
