What's for Dinner?

We skype with my Dad & Mary on Sunday nights, usually for about an hour. The fridge was wiped clean of of all leftovers (except for brown rice) due to lots of time around home this weekend, so we needed something quick and easy for dinner tonight. They love rice, so I decided to whip up some simple fried rice before our skype date. Of course both kids wanted to help...


S&Z's "Yummy" Fried Rice

1 T. vegetable oil
2 scallions, chopped
2 eggs, beaten
1/2 c. frozen chopped spinach*
1/2 c. frozen peas
1 c. leftover brown rice
Low sodium soy sauce or tamari, to taste
*Usually I use steamed broccoli and/or carrots, but didn't have either on hand and wanted to keep it fast. Spinach packs such a nutritional punch, and it ended up tasting delicious!

In a wok or saute pan, heat oil over medium heat . Add scallions and spinach; cook for a few minutes. Pour in beaten eggs and scramble with the spinach and green onions. Once cooked through, add the rice and peas. Combine and cook over low until everything is heated through. Season with soy sauce to taste.


They loved it!!! And I loved the fact that they were getting a hearty serving of veggies (peas and spinach) and some protein from the eggs. This easy, improv recipe will definitely be added to the rotation.

Food Prep

We recently bought a house and moved about 20 miles outside of Boston. One of the changes that came along with a new commute and work schedule is that I have started making dinner for the kids every night, instead of just Friday-Sunday (Julia, our wonderful long-time nanny, historically fed them dinner Monday-Thursday). Derek and I still have opposite work schedules, which means that I have the kids without him 5-6 nights/week. In order to make healthy meals AND pack lunches while flying solo, at a minimum I need to have a well-stocked fridge and basic menu plan for the week. Even better is when I can get some cooking and/or food prep done on Sunday. Before I go to the gym on Sunday mornings I usually peruse some recipes in search of culinary inspiration. Auntie Tracy's Visit

Tracy is one of my best friends, but I haven't seen her in person in two years ! This means that I hadn't met her daughter, Brynn, who turns 2 in June. I was sooooooooo excited when I found out that Tracy and Brynn would be visiting Tracy's sister, Timery this weekend. We decided to meet at Mall Tots  again so that the kids could run around and we could catch up. It's a 45 minute drive and it was a beautiful day, so the kids were hunkered down with sunglasses, snack and stuffed animals on the ride up. Zoe and Brynn initially got acquainted in the bouncy house, And then Zoe pushed her around in a car.   Of course my kids (and husband!) had plenty of distraction with the video games too. We packed up the kids and then had lunch at Buffalo Wild Wings before heading back home. Timery and Tracy are like sisters to me. What a fantastic day!!!
