Pantry Peanut Sauce

Here is a recipe for a pretty easy pantry peanut sauce. I've tried a few others and this is the one I keep coming back to. It's adapted from Bon Appetit magazine.

Sesame oil
1 bunch of green onions, chopped
A few cloves of garlic, minced
1 T. ginger, minced
1/4 c. honey
1/4 c. peanut butter
1/4 c. low sodium soy sauce
3 T. unseasoned rice vinegar
1-1/2 T. chili-garlic sauce


Heat 1 T. sesame oil in a skillet over medium-high heat. Add green onions, garlic and ginger; saute until onions soften, about 2 minutes. Add the remaining ingredients and whisk to blend. Simmer sauce 1 minute. Cool to room temperature.

I cook up 8 oz. of chinese noodles according to the package directions (sold in the produce section by the tofu at my supermarket). Drain the noodles and drizzle with a little sesame oil. Add chopped vegetables of choice (I do matchstick-cut carrots and diced cucumber; sometimes I add bean sprouts and/or diced red pepper). I often have tofu that has been marinated in Trader Joe's 'soyaki' and sauteed in sesame oil in the refrigerator for the kids, so if I have extra tofu I add that to the noodle salad as well. Toss with the peanut sauce and garnish with chopped green onion and finely chopped peanuts. YUM!

Today

Today I went to a yoga class for the first time in far too many years. It felt wonderful and pushed me out of my comfort zone. I can't wait to go back! Today Derek gave Silas his traditional mid-summer haircut. Today the weather was perfect and we enjoyed bike rides (them) / a walk (me) in the park after lunch. Today Zoe chased the cats until they succumbed to her love and adoration. Today I put the garbage on the curb for weekly pickup and realized that we didn't have any! We recycle and compost far more than we throw away. I am grateful to be able to teach Zoe & Silas these habits. Summer Nights

As we hit the end of July we are relishing the relaxed summer nights around here. Walks to the corner store after work- Kitten snoozes in the window- Playing outside after dinner- And after dinner bike rides in the park aplenty. The best part is when they ride down the "big hill" out of the woods and we make the loop home. These are the days.
