Family Dinners

I think that cooking and eating dinner together two nights a week will be the best part of Derek's new schedule. Tonight we made tilapia and an improv quinoa dish. I am very inspired by the farmer's market this time of year, and here is what I came up with tonight.


Quinoa with Swiss Chard and Roasted Beets

CATEGORIES

INGREDIENTS

    • Leftover quinoa (I had about 3 cups of quinoa that had been cooked in coconut milk)
    • 1 bunch swiss chard, stems chopped and set aside
    • Onions and garlic
    • Sesame oil
    • Low sodium soy sauce
    • 6 beets, individually wrapped in foil and roasted according to ATK recipe

INSTRUCTIONS

    1. Saute chard stems, onion and garlic in 1 T. sesame oil. Add swiss chard and cook it down. Add 1 T. soy sauce. Once the chard is cooked, add the peeled-roasted-diced beets and quinoa.


Since S&Z helped cook everything, they were very motivated to eat it too. It also didn't hurt when I explained to Zoe that her pee would be pink tomorrow morning from eating beets :).

After dinner the kids ate mini popsicles on the deck while we skype'd with my Dad & Mary.

The Best of Project 366

2012 is coming to a close and I have officially completed Project 366 ! I managed to take and post and keep track of 365 photos out of 366 total days this year. I only missed one day and it was for a pretty good cause . Believe me, these pictures don't take themselves. I shot just under 7000 pictures this year. Once I got an iPhone in March all of the pictures were taken with my phone (~ 5500 pictures!). The camera on the iPhone is really good, I always have it with me, and I like playing around with the filters and other editing tools available in photography apps like Instagram, Camera+, Diptic, and Gridditor. Since I have put so much time, love and energy into Project 366 I thought I should select a few "Best Of's". I had a great time putting this together, and I hope you enjoy these highlights as well! The Blog Book is Here!!!

My friend, Tom, told me about a website where you can order a bound copy of your blog. I've had it on my radar for awhile, but I finally just got around to making a book of the first year of entries. It starts with 'Icing on the Cake' , the last entry before they were born, and it ends with Halloween . It turned out better than I could have imagined! I cried when I opened it...
